Elaboración creada por el Chef Andrés Gallardo Mayeta, en 1995. Ha sido plato emblemático del restaurante El Baturro, ubicado en el centro de la ciudad de Santiago de Cuba.
Ingredientes:
Carne de cerdo 60 g
Suprema de pollo (pechuga) 45 g
Caldo de pollo 500 mL
Ajo fresco 2 dientes, pelados
Pimienta blanca molida Al gusto
Sal Al gusto
Hoja de laurel 1 unidad
Arroz 50 g
Queso amarillo 30 g
Modo de elaboración:
Estofar el cerdo y el pollo, picados en juliana mediana, con el ajo laminado, la pimienta blanca molida, la sal y la hoja de laurel. Cocinar el arroz con el caldo de pollo. Cuando esté listo, servirlo moldeado con un timbal sobre un plato para asado. Encima del arroz, colocar el estofado de cerdo y pollo. Cubrirlo con otra capa de arroz y encima de ésta, el queso amarillo rallado. Como se sirve caliente, el queso se gratinará.
