The most famous cod dishes

Cod gives name to some of the most famous dishes of the Basque, Catalonian and Portuguese cuisine. Today, there is renewed interest in cod as a main ingredient. Popular recipes of famous origins are presented in the menu of haute cuisine restaurants with new and imaginative creations.

Cod is the flagship of the Basque cuisine and could not be understood without two sauces: the blended sauce and the Basque sauce.

In the bacalao al pil pil, olive oil and gels show the desalted cod merge into one body, forming a linked sauce that enhances the taste of fish. In the cod viscaine style, the main ingredients of the salsa are red onion, peppers and tomatoes choriceros. The Base of the green sauce is parsley, garlic, and green pepper

Cod llauna style is a classic of the Catalan cuisine, particularly in the metropolitan area of Barcelona. It also highlights the cod or bacallà sanfaina or with raisins and pine nuts. In the cod llauna style the baked fish in the pan, lightly dusted and fried, is passed to a llauna (tin tray, from where it takes its name), is sprayed with a sauce of garlic, paprika, parsley and white wine and is finally gratinated.

cod al ajoarriero is originally from Navarre and is prepared from cod crumbled. Put peppers, potatoes, tomatoes, onion and garlic. This recipe is also present in the popular recipe of the Aragonese cuisine and Zamora, with certain differences. In Aragon is first introduced to the oven and then crumbles with no peppers.
