Gastronomical tour through old carnival

When Christmas ends, Cadiz continues its traditional calendar of events and gets immersed in the preparation of its Carnival, the festival par excellence that goes a long way back to the late 16th century.

In 1862, it became part of the municipal holiday calendar. Almost twenty years later one of its most genuine carnival gathered: choirs, funny entertainment, quartets, Romanceros and Comparsas.

At Carnival you have to taste the dishes of these days: the tortilla shrimp, the sea urchins, oysters, galleys and, above all, papas aliñadas ... and drink beer or Manzanilla from Sanlúcar, which tastes heavenly listening to the jokes.

However, in Cadiz the most popular way of eating the fish is fried, which can be found in any corner or square. These frituras platters are inexpensive and very good. Cadiz has one of the most beautiful fish markets flounders, hake, Rota, dogfish, mullet, puntillitas, golden bass, and cuttlefish are presented almost alive.

For this reason, besides visiting the fish fritters establishments, people must taste some tapas. At any bar, however humble, you can enjoy a good plate of fish and seafood, stew, marinated, fried or grilled, while opening the appetite with some tortilla chips or potato shrimp salad dressings.

However, Carnival is also the source of another cuisine, coming from the family stoves. Where you can fetch tiny pieces of a yellow shark cooked in, a peppered tuna delicacy marinated with some good vinegar, fish balls, cubes of sea bass, and much more along with some glasses of the best wines of the region.”
